Sweet and Spicy Tuna Nicoise


Okay friends...this is what my family had for dinner Tuesday night.  A little slow on the posting. I am one of those Avid Couponers that will not settle for frozen meals, etc just because I have a coupon that makes it free. It is my goal and responsibility to feed my family in a healthy manner on a budget. Now for info on the dish.

Sweet and Spicy Tuna Nicoise (serves 3)

Salt (for pasta water)
3/4 lbs of Fresh Green Beans (bought at Farmer's Market)
1/2-3/4 lbs Whole Grain Omega-3 Pasta
Pepper
1/4 c. Cooking Creme Original
1 Packet of Sweet and Spicy Tuna (serves 2.5)
1/4 c. Shredded Italian Cheese

Bring a pot of Salted water to a boil. While you are waiting on your water, grab a big bowl and fill with ice water, set aside. Once water is boiling, add in your Green Beans and cook for 3-4 minutes, until tender. Scoop out your Green Beans and place them in the ice water (called blanching). This will keep your Green Beans "green" and stop the cooking. Add your Pasta to the same pot you cooked the Green Beans in. Cook according to package directions. While Pasta is cooking, drain your Green Beans. Once Pasta is cooked to al dente, drain the Pasta and place back in pot (turn off heat). Add desired amount of Pepper, the Cooking Creme, the Sweet and Spicy Tuna (flaked) and the Shredded Italian Cheese, stir. Then toss in the Green Beans.  Eat!

That is it. The ingredients can be changed out however you like (meat, veg, etc). It is very easy and healthy. Most of these items for the meal were free (Salt-freebie, Pepper-freebie, Green Beans were $1 at the Farmer's Market, Pasta was FREE, Cooking Creme was FREE, Sweet and Spicy Tuna was $0.85 and the Shredded Italian Cheese was FREE=$1.85 for three people, that is eating healthy on a budget!)
